As the party season ends, why not try a healthy treat or two to ease any guilt about the festive overindulgence, with this deliciously recipe. It’s perfect for a light supper, or a great alternative to Taramasalata as an afternoon snack.
Cream Aperitif of Cucumber
Level of difficulty: low
Preparation time: 40 minutes
Ingredients - Serves 4
2 large cucumbers, peeled and chopped
200g natural yoghurt
2 cloves of garlic
Salt and ground pepper
2 tablespoons olive oil
Cold water, depending on the desired thickness

Preparation

Blend cucumber, yoghurt, garlic and spices with a hand blender or food processor.

Add a little water for a thinner consistency if desired.

Add the oil slowly whilst blending.

Refrigerate for at least 30 minutes and serve very cold.
Chef’s tip: You can add a sprig of mint to give it a fresh look and decorate with thin slices of cucumber.
