Contemporary Indian cuisine added to cookery school menu

A UTTOXETER-BASED cookery school has welcomed a new chef with a focus on contemporary Indian cuisine to its team.

Seasoned Cookery School, which has its head office in Birch Cross, has announced Sudha Shankha Saha, chef, patron and co- owner of the Saffron restaurant chain in the Midlands, joined the team this autumn.

His dishes are light, fragrant, full of flavour and have become renowned on the Birmingham restaurant scene among customers and other top chefs.

Mr Saha (pictured far left) will be teaching the new Contemporary Indian Cuisine courses focussing on fish and vegetarian and the other on meat and game.

The aim of these courses is to teach customers how to use delicate spices to enhance simple, seasonal ingredients to produce fantastic dishes.

Seasoned founder Clare Tetley said: “Sudha is extremely passionate about Indian cuisine and loves experimenting with unique flavour combinations bringing a modern approach to his dishes.

“We are excited about welcoming him to the team and know that people will love his in-depth knowledge and inspirational approach.” The first of his courses will be held at Catton Hall on November 18 and December 2. Mr Saha will also be joining forces with Seasoned Cookery to offer team building days for Birmingham-based businesses.
